Step

Turn on your Instant Pot and select the Sauté function. Add the Italian sausage and cook, breaking it up with a spoon, until browned (about 5 minutes).

Add the chopped yellow onion and minced garlic to the pot. Continue to sauté until the sausage is fully browned and the onions are translucent (about 3 minutes). Press 'Cancel' to stop the Sauté function.

Pour in the chicken stock and water. Use a wooden spoon to scrape up any browned bits from the bottom of the pot. Season with salt and pepper. Add the potato gnocchi, ensuring they are submerged, but do not stir (about 2 minutes).

Secure the Instant Pot lid and set the cooking time to 0 minutes at High pressure. Allow a natural pressure release for 5 minutes, then manually release any remaining pressure (Total time about 26 minutes: ~16 minutes to come to pressure + 5 minutes natural release + ~5 minutes manual release).

Carefully open the lid. Select the Sauté function again. Stir in the torn kale and heavy whipping cream (about 1 minute).

Sauté until the kale has wilted and the soup is heated through (about 2 minutes). Press 'Cancel' to stop the Sauté function.

Ladle the Gnocchi Zuppa Toscana into bowls and garnish generously with grated Parmesan cheese. Serve immediately and enjoy!

For a vegetarian option, substitute the Italian sausage with plant-based sausage or omit it altogether, adding a can of cannellini beans for extra protein.
Adjust the amount of heavy cream to your liking for a richer or lighter soup.
If you don't have kale, spinach is a great substitute. Add it in the last minute of cooking as it wilts quickly.
To prevent the gnocchi from sticking, avoid stirring them in before pressure cooking.
