Combine Ingredients: In a multi-functional pressure cooker (such as an Instant Pot®), add steel-cut oats, water, almond milk, diced apple, diced dates, finely chopped fresh rosemary, vanilla extract, ground cinnamon, and a pinch of salt. Stir gently until just combined. (2 minutes)

Pressure Cook: Close and lock the lid of the Instant Pot. Select high pressure according to the manufacturer's instructions. Set the timer for 4 minutes. Allow 10 to 15 minutes for the pressure to build. (15 minutes)

Release Pressure: Let the Instant Pot sit for 5 minutes to allow the pressure to naturally release. Then, use the quick-release method according to the manufacturer's instructions to fully release any remaining pressure. (5 minutes)

Serve: Unlock and carefully remove the lid. Stir the cooked oatmeal thoroughly. Transfer to a serving bowl and top with chopped pecans, or your favorite toppings. (3 minutes)

For a richer flavor, toast the steel-cut oats in the Instant Pot with a tablespoon of coconut oil before adding the liquid.
Adjust the amount of rosemary to your liking. Start with less and add more after cooking if desired.
Substitute other nuts like walnuts or almonds for the pecans.
For a vegan option, ensure your vanilla extract is alcohol-free or use a vanilla bean paste instead.
