In a large saucepan, combine the sliced peaches, honey, and peach schnapps. Cook over medium heat, stirring occasionally, until the peaches soften and the mixture begins to thicken, approximately 8 minutes. Stir in the sugar and cinnamon until well combined. Incorporate the flour, bring the mixture to a gentle simmer, and continue cooking until the filling has thickened to your desired consistency, about 10 to 15 minutes. Remove from heat, transfer the filling to a separate container, and refrigerate for at least 4 hours or, preferably, overnight to allow the flavors to meld.

Preheat your oven to 425 degrees F (220 degrees C).

Carefully fit one pie crust into a 9 1/2-inch pie plate. Cut the remaining pie crust into strips approximately 1-inch wide. Spread the chilled peach filling evenly into the prepared pie plate. Create a lattice crust by weaving the strips of dough over and under each other across the top of the filling. Pinch the ends of the strips to the bottom crust to secure.

Place the pie in the preheated oven and bake for 15 minutes. After 15 minutes, remove the pie from the oven and carefully cover the edges of the crust with strips of aluminum foil to prevent excessive browning. Return the pie to the oven and continue baking until the top crust is a beautiful golden brown, approximately 30 more minutes. Remove the pie from the oven and let it cool completely on a wire rack to allow the filling to set properly, which should take at least 2 hours.

For an extra layer of flavor, consider adding a splash of vanilla extract to the peach filling.
If you prefer a less boozy pie, you can substitute the peach schnapps with peach juice or nectar.
Be sure to let the pie cool completely before slicing to prevent a runny filling.
To prevent the bottom crust from becoming soggy, bake the pie on the lowest rack of your oven.
