Once the sweet potatoes are tender, carefully transfer them to a food processor or an immersion blender cup, making sure to reserve the cooking water.

Blend the sweet potatoes until completely smooth. Gradually add 1/2 to 3/4 cup of the reserved cooking water, blending continuously, until you achieve your desired consistency. For a thinner purée, add more water; for a thicker consistency, use less.

Allow the purée to cool completely before serving or storing. You can store the purée in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months. For easy thawing, freeze in small, individual portions.

For enhanced flavor, consider roasting the sweet potatoes instead of boiling. Roasting intensifies their natural sweetness.
