Step

In a medium pot, bring water to a rolling boil. Add the sorted and rinsed pinto beans, quartered onions, crushed garlic, ham base, and salt. Stir well to combine and return the mixture to a boil. (5 minutes)

Once boiling, cover the pot tightly, turn off the heat completely, and let the beans stand undisturbed for 1 hour. This allows the beans to hydrate and begin cooking evenly. (60 minutes)

After the hour, return the pot to the stove and bring the beans to a boil once more. Then, reduce the heat to a gentle simmer. (5 minutes)

Simmer the beans, uncovered, stirring occasionally to prevent sticking, until they are tender and have reached your desired consistency. This typically takes 40 to 50 minutes, but may vary depending on the age and variety of your beans. (40-50 minutes)

For an even richer flavor, consider adding a smoked ham hock or a piece of bacon to the pot during the simmering process. Remove before serving.
Adjust the amount of salt to your preference. Remember that the ham base already contains sodium.
If the beans absorb all the water during simmering, add more, about 1/2 cup at a time, to maintain a desirable level of liquid.
These pinto beans are delicious served with cornbread, rice, or your favorite Mexican dishes.
