In a large stock pot, melt the margarine over medium heat. Add the celery, carrot, and onion and cook, stirring occasionally, until the onion is softened and lightly browned, about 10 minutes. Add the ham, potatoes, corn, green beans, and enough water to completely cover the vegetables. Bring to a simmer and cook until the potatoes are nearly tender, about 30-35 minutes.

Stir in the broccoli, cream of mushroom soup, Swiss-style cheese food, 2% milk, salt, and black pepper. Continue cooking until the cheese is fully melted and incorporated into the soup, about 5 minutes.

Feel free to experiment with different vegetables such as frozen peas, asparagus, or cauliflower. Adjust the amount of water to achieve your desired soup consistency. For a vegetarian version, omit the ham. Stir frequently after adding the milk and cheese to prevent scorching.
