Step

Heat olive oil in a stockpot over medium-low heat. Add the diced onion, celery, and carrots. Cook, stirring occasionally, until the onion becomes translucent, about 10 minutes.

Add the sliced cremini mushrooms to the pot. Continue to cook, stirring occasionally, until the mushrooms soften slightly, about 5 minutes.

In a small bowl, whisk together the tomato paste and 1 tablespoon of water until smooth. Add the remaining water, dried marjoram, dried rosemary, paprika, dried sage, bay leaf, cayenne pepper, and salt and pepper to taste. Stir well to combine.

Pour the tomato paste mixture into the stockpot with the vegetables. Add the chicken pieces. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer until the chicken is cooked through and the vegetables are tender, about 40 minutes.

In a separate small bowl, whisk together the cornstarch and cold water until smooth, creating a slurry. Stir the cornstarch slurry into the stew. Bring the stew back to a boil and cook until it thickens to your desired consistency, about 5-10 minutes.

Feel free to add other vegetables, such as potatoes, parsnips, or peas, to customize this stew to your liking.
For a vegetarian option, omit the chicken and add a can of drained and rinsed chickpeas or white beans.
Adjust the amount of cayenne pepper to control the level of spiciness.
Ensure the chicken is fully cooked before serving. An internal temperature of 165°F (74°C) is recommended.
