In a large Dutch oven or heavy-bottomed pot, heat over high heat until hot. Add the ground beef and cook, breaking it apart with a spoon, until it's barely pink. Add the chopped onions and bell peppers. Continue to cook until the meat is browned and the onions have softened and turned translucent (approximately 5 minutes).

Carefully pour the mixture into a large mesh strainer to drain off any excess grease. Press gently to remove as much liquid as possible.

Return the drained meat and vegetable mixture to the Dutch oven. Stir in the stewed tomatoes (with their juice), kidney beans (with their liquid), tomato sauce, and drained pineapple chunks. Season with chili powder and salt.

Bring the chili to a boil, then reduce the heat to medium-low. Simmer uncovered, stirring occasionally, until the chili has thickened and the flavors have melded together to your desired consistency (approximately 10 minutes).

For a spicier chili, add a pinch of cayenne pepper or a chopped jalapeño along with the bell peppers.
If you prefer a smoother chili, you can blend some of the stewed tomatoes before adding them to the pot.
This chili tastes even better the next day, as the flavors have more time to develop. Store leftovers in an airtight container in the refrigerator for up to 3 days.
