For a spicier dip, leave some of the seeds in the poblano peppers or add an extra pinch of cayenne pepper. If you don't have a grill, you can roast the poblano peppers under the broiler or directly over a gas stovetop flame. Adjust the amount of milk to achieve your desired dip consistency. For a thinner dip, add more milk; for a thicker dip, use less.
