Prepare your grill by preheating it to medium-high heat. Ensure the grill grate is clean and lightly oiled to prevent sticking. (Time: 5 minutes)

Remove the shark steaks from the milk marinade and gently pat them dry with paper towels. Discard the milk. Evenly season both sides of the steaks with fresh lemon juice, sea salt, and freshly ground black pepper. (Time: 5 minutes)

Place the seasoned shark steaks onto the preheated grill. Cook for approximately 15 minutes, flipping once halfway through, until the meat is firm and cooked through. The steaks should appear opaque and white throughout. (Time: 15 minutes)

For enhanced flavor, consider adding a pinch of smoked paprika to the steaks along with the salt and pepper.
Ensure the grill is hot enough to create a nice sear on the outside of the shark steaks, which will help retain moisture.
Shark can dry out easily, so avoid overcooking. Use a meat thermometer to check for doneness; an internal temperature of 145°F (63°C) is ideal.
