Follow The Directions

01

Step

Preheat your oven to 350°F (175°C). Spread the peanuts evenly on a baking sheet. (2 minutes)

02

Step

Toast the peanuts in the preheated oven until they are fragrant and lightly golden brown, approximately 7-8 minutes. Remove from the oven and let them cool slightly. (10 minutes)

03

Step

In a mortar and pestle (or a food processor), combine the toasted peanuts, Thai chilies, garlic, dried shrimp, and sugar. Grind into a coarse paste. (5 minutes)

04

Step

In a small bowl, whisk together the lime juice and fish sauce to create the dressing. (2 minutes)

05

Step

In a large bowl, gently toss the julienned green papaya, halved cherry tomatoes, green beans, and shredded carrot with the prepared dressing. Season with salt and pepper to your liking. (5 minutes)

06

Step

Transfer the salad to a serving platter and enjoy the symphony of flavors!

For a vegetarian version, omit the dried shrimp and substitute with a vegetarian fish sauce alternative or soy sauce.
Adjust the amount of Thai chiles to control the level of spiciness.
If you don't have a mortar and pestle, a food processor works well, but be careful not to over-process the ingredients into a smooth paste.
For optimal flavor, allow the salad to sit for about 10-15 minutes before serving, allowing the dressing to meld with the vegetables.
