Follow The Directions

01

Step

In a small bowl, meticulously blend the dried rosemary, ground black pepper, salt, dried oregano, garlic powder, onion powder, cardamom, and coriander. (Prep time: 5 minutes). Generously season the chicken breasts with this aromatic spice mixture. Heat the vegetable oil in a saucepan over medium heat until it glistens, approximately 2 to 3 minutes. Add the seasoned chicken to the pan and cook, covered, for 4 to 5 minutes. Turn the chicken and continue cooking, uncovered, until beautifully browned and cooked through, about 5 to 6 minutes more. Ensure an internal temperature of at least 165 degrees F (74 degrees C). Drizzle the chicken with fresh lemon juice and allow it to rest for 5 minutes before slicing into elegant strips.

02

Step

While the chicken is cooking, bring the water to a rolling boil in a separate saucepan and season generously with salt. Stir in the dry couscous, cover the saucepan tightly, and remove from the heat. Allow the couscous to steam undisturbed for 5 minutes, then fluff it gently with a fork to separate the grains.

03

Step

For the tzatziki sauce, whisk together the shredded cucumber, sour cream, Greek yogurt, lemon juice, olive oil, minced garlic, fresh mint, fresh dill, salt, and black pepper in a bowl until just combined. Avoid overmixing to maintain a delightful texture.

04

Step

Divide the fluffy cooked couscous evenly among 4 bowls. Arrange the sliced lemon chicken artfully on top, followed by a generous spoonful of tzatziki sauce. Garnish with the broccoli florets, diced red onion, diced cucumber, diced Roma tomatoes, Kalamata olives, fresh parsley, and crumbled feta cheese. Serve immediately or pack into airtight containers for a delightful and healthy meal later.

For an extra layer of flavor, marinate the chicken in the spice mixture and lemon juice for at least 30 minutes before cooking.
Feel free to substitute other vegetables based on your preferences and what's in season. Bell peppers, zucchini, or spinach would all be delicious additions.
To make this recipe vegetarian, replace the chicken with grilled halloumi cheese or roasted chickpeas.
The tzatziki sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
