Follow The Directions

01

Step
4 mins

Bring a large pot of lightly salted water to a rolling boil. Gently add the gnocchi and cook until they float to the surface, about 2 to 4 minutes. Using a slotted spoon, carefully transfer the cooked gnocchi to a bowl and set aside to prevent sticking.

02

Step
5 mins

While the gnocchi cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced asparagus and minced garlic and sauté until the asparagus is tender-crisp, approximately 5 minutes. Transfer the asparagus mixture to a plate and set aside.

03

Step
5 mins

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the shrimp, 2 tablespoons of pesto, and 1 tablespoon of lemon juice. Sauté until the shrimp are fully cooked, pink, and opaque, about 5 minutes. Be careful not to overcook them.

04

Step
2 mins

Add the cooked gnocchi, sautéed asparagus mixture, remaining pesto, and remaining 1 tablespoon of lemon juice to the skillet with the shrimp. Stir gently to combine all the ingredients, ensuring the gnocchi are well coated with the pesto sauce. Heat through for another minute or two.

For the best flavor, use freshly made pesto. If using store-bought, consider adding a handful of fresh basil leaves to brighten the flavor.
To prevent the gnocchi from sticking together, toss them gently with a little olive oil after cooking.
Feel free to add a pinch of red pepper flakes for a touch of heat.
Serve immediately and enjoy!

The lemon juice really brightens up the dish. I added a pinch of red pepper flakes for a little heat.

I made this using store-bought gnocchi and pesto, and it was still delicious. Next time, I'll try making my own pesto to elevate the flavors even more.
