Bake in the preheated oven until the internal temperature of the ham reaches 140 degrees F (60 degrees C), approximately 1 1/2 to 2 hours. Cover with aluminum foil if the ham starts to look dry. (90-120 minutes)

While the ham is baking, prepare the Peach-Ginger Sauce: In a small bowl, mix cinnamon, mustard, and 1/4 cup brown sugar together. Set aside. (5 minutes)

In a saucepan over medium heat, combine apple cider vinegar, peach nectar, peach preserves, and remaining 1/4 cup brown sugar. Bring to a boil, then stir in sliced peaches, ginger, hot pepper, and cinnamon stick. Simmer until the peaches are tender and the sauce has thickened, about 25 to 30 minutes. (30 minutes)

Remove the ham from the oven and brush liberally with the peach-ginger sauce. Increase the oven temperature to 350 degrees F (175 degrees C). (5 minutes)

Uncover the ham and return it to the oven. Bake until the glaze is bubbly, about 20 to 30 minutes more. (25 minutes)

Let the ham rest for 15 to 20 minutes before carving. Serve with the remaining peach-ginger sauce. (20 minutes)

For a deeper flavor, consider marinating the ham overnight with a dry rub of brown sugar, spices, and a touch of smoked paprika.
Adjust the amount of ginger and hot pepper to suit your personal taste preferences. For a milder sauce, remove the seeds from the hot pepper.
The Peach-Ginger sauce can be made 1-2 days in advance and reheated before serving, allowing the flavors to meld even further.
