For a richer flavor, try using apple cider vinegar instead of white vinegar.

This salad can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will meld together beautifully over time.
If you don't have rapeseed oil, you can substitute it with another neutral-tasting oil like canola or grapeseed oil.
