For best results, use fresh pineapple juice. Canned juice can be used, but the flavor will not be as vibrant. This marinade is excellent on chicken, pork, or even firm tofu. Adjust the amount of brown sugar to your liking, depending on your desired level of sweetness. If you don't have pineapple preserves, you can substitute with apricot or peach preserves for a similar flavor profile. Be sure to discard the marinade that has been in contact with raw meat to prevent any food safety concerns.
