Remove the kernels from the corn cobs by running a sharp knife down the side. Place the kernels in a bowl. Using the back of the knife, scrape the remaining "milk" from the cobs into the same bowl. Reserve one cob. (5 minutes)

In a large saucepan or Dutch oven, melt the butter over medium-low heat. Add the scallions, onion, and garlic. Cook, stirring occasionally, until softened and fragrant, about 3 minutes. (5 minutes)

Add the corn kernels, corn milk, potatoes, and jalapeño to the saucepan. Cook, stirring frequently, for about 10 minutes, allowing the flavors to meld together. (10 minutes)

Pour in the milk and vegetable broth. Add the reserved corn cob. Bring the mixture to a simmer, then reduce the heat to low. Cook until the potatoes are completely tender and the soup has thickened slightly, about 15-20 minutes. (20 minutes)

Remove and discard the corn cob. Stir in the chopped cilantro and season generously with freshly ground black pepper to taste. (2 minutes)

For a richer flavor, consider using homemade vegetable broth.
If you prefer a smoother chowder, you can use an immersion blender to partially blend the soup before adding the cilantro.
Garnish with a dollop of sour cream or a sprinkle of crumbled cotija cheese for an extra touch.
