For a vegetarian option, omit the andouille sausage and add a can of drained and rinsed black beans or white beans for added protein and texture.
If fresh corn is unavailable, you can substitute 2 cups of frozen corn kernels. Add them directly to the pot without thawing.
To deepen the flavor, consider adding a tablespoon of tomato paste along with the crushed tomatoes.
Serve hot as a main course or as a hearty side dish. Excellent with rice or crusty bread for soaking up the flavorful sauce.
