Stir in the granulated onion, granulated garlic, ancho chile powder, and cayenne pepper until well incorporated. Add the wilted spinach to the sauce and stir to combine.

For a milder flavor, substitute Monterey Jack or cheddar cheese for the habanero cheese.
If you don't have a microwave steamer, you can steam the spinach in a skillet with a lid or blanch it in boiling water for about 1 minute.
A dash of nutmeg in the cheese sauce adds a warm, comforting note.
