Elevate your holiday table with this luscious spinach gratin. Tender, vibrant spinach melds seamlessly with nutty Swiss cheese, crowned with a golden, buttery breadcrumb topping. Prepare ahead for stress-free entertaining!
Preheat oven to 400 degrees F (200 degrees C).
Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened and translucent, about 5 minutes. Season with salt, pepper, and dried thyme. Sprinkle flour over the onion mixture and cook, stirring constantly, until a thick paste forms, about 1 minute.
In a large soup pot, place the chopped spinach and cover. Heat on low until the spinach begins to wilt, approximately 4 minutes. Turn off the heat and add the half-and-half, 1 cup of shredded Swiss cheese, and the onion mixture. Stir well to combine and transfer the mixture to a 9-inch gratin dish.
In a separate bowl, combine the bread crumbs and the remaining 1/2 cup of Swiss cheese. Pour the melted butter over the top and stir until evenly coated. Spread the bread crumb mixture evenly over the spinach in the gratin dish.
Bake in the preheated oven, uncovered, for 20 minutes, or until the top is golden brown and the gratin is bubbly. Let cool for 5 minutes before serving.
