Follow The Directions

01

Step

In a large saucepan, combine the orange juice, brown sugar, granulated sugar, vanilla extract, and cinnamon. (5 minutes)

02

Step

Bring the mixture to a gentle boil over medium heat, stirring until the sugars are completely dissolved. (5 minutes)

03

Step

Carefully place the peeled and cored pears into the simmering syrup, ensuring they are mostly submerged. Cover the saucepan and reduce the heat to low. Simmer gently for 1 hour and 15 minutes, flipping the pears twice and spooning the sauce over them every 10 minutes to ensure even poaching. (75 minutes)

04

Step

Once the pears are tender and infused with the orange-cinnamon flavor, gently transfer them to individual serving dishes. (2 minutes)

05

Step

Continue to cook the remaining syrup in the saucepan over medium heat, stirring frequently, until it thickens slightly and develops a rich, marmalade-like consistency, about 15 minutes. (15 minutes)

06

Step

Stir in the chopped walnuts. (1 minute)

07

Step

Spoon the warm, walnut-studded sauce generously over the poached pears. Serve immediately or chilled.

For an extra layer of flavor, add a star anise or a cinnamon stick to the poaching liquid. Remove before serving.
Serve the poached pears with a dollop of crème fraîche or mascarpone cheese for a decadent treat.
If you don't have walnuts, pecans or almonds also work well.
The pears can be prepared ahead of time and stored in the refrigerator for up to 2 days. Gently reheat them in the sauce before serving.

The walnuts add a wonderful texture. I used pecans because that's what I had on hand, and it was still delicious.
