Follow The Directions

01

Step

In a small bowl, combine Italian seasoning, onion powder, garlic powder, celery seed, parsley, thyme, basil, oregano, salt, black pepper, and bay leaf.

02

Step

Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite. Drain. (Approximately 8 minutes)

03

Step

Heat olive oil and butter together in a large saucepan over medium-high heat; cook and stir carrot, celery, and onion until heated through. Add garlic, green bell pepper, red bell pepper, zucchini, and Italian seasoning mixture; stir to combine. (Approximately 2-3 minutes)

04

Step

Stir in tomatoes and their juice, tomato sauce, three bean salad, green beans, and chicken stock into the seasoned vegetable mixture. Bring to a boil, reduce heat, and simmer, stirring occasionally, until flavors are blended. Stir in elbow macaroni before serving. (Approximately 30 minutes)

For a richer flavor, use homemade chicken stock. You can also add a parmesan cheese rind while simmering the soup to give it more depth.
Feel free to customize the vegetables based on what you have on hand or what's in season. Some great additions include kale, spinach, or yellow squash.
Serve with crusty bread for dipping into the delicious broth.

I thought the flavor was great, but I suggest adding the macaroni during the last five minutes of cooking so that it does not overcook and become mushy.

I added some chopped kale to the soup, and it was a great addition.

I didn't have any elbow macaroni, so I used ditalini, and it worked perfectly.
