For a richer flavor, consider using toasted pecans instead of walnuts. If you don't have Gorgonzola, crumbled blue cheese or feta cheese make great substitutes. The cranberry vinaigrette can be made ahead of time and stored in the refrigerator for up to 3 days. Be sure to shake well before using. For a vegan option, omit the Gorgonzola cheese and use maple syrup in place of sugar in the vinaigrette.
