Begin by filling a stainless steel steamer pot with approximately 1 inch of water. Bring the water to a rolling boil. (2 minutes)

Carefully place the eggs into the steamer tray and gently lower the tray into the pot. Cover the pot tightly and reduce the heat to medium-low. Steam for 10 minutes for gloriously jammy yolks, or extend the steaming time to 15 minutes for yolks that are fully set.

Once the steaming is complete, remove the steamer tray from the pot. Give the eggs a gentle rattle within the tray to create hairline cracks in the shells. Immediately transfer the eggs to a bowl filled with ice water. Allow them to sit in the cold bath for 3 to 5 minutes to halt the cooking process and further aid in shell separation.

Remove the eggs from the ice water bath. Gently tap each egg to create fine cracks across the surface. Then, on a clean cutting board, gently roll the egg to loosen the shell. Begin peeling from the wider, air-pocket end of the egg, working towards the pointed tip. The shell should slip away effortlessly, revealing a perfectly cooked egg beneath.

For the freshest-tasting eggs, use eggs that are at least a few days old, as they tend to peel more easily.
Avoid overcrowding the steamer basket to ensure even cooking.
If you prefer your hard-cooked eggs with extra soft yolks, try 8 minutes.
