For a richer flavor, try using Gruyere cheese instead of Cheddar. If you don't have cooked ham on hand, bacon or sausage work equally well. To prevent the top from browning too quickly, cover the quiche loosely with foil during the last 15 minutes of baking. For a vegetarian option, replace the ham with sautéed mushrooms or spinach.
