In the Instant Pot, combine water, apple cider vinegar, and liquid smoke. Place the trivet inside. (Prep time: 5 minutes)

Season the baby back ribs generously with salt and pepper on both sides. Cut the rack in half for easier handling. Arrange the ribs in a teepee formation on the trivet, and drizzle a bit of barbecue sauce over each half, allowing it to coat the sides. Secure the lid, ensuring it's properly sealed. (Prep time: 10 minutes)

Select the 'Meat' setting on your Instant Pot, and set the timer for 30 minutes. Allow the Instant Pot to come to pressure, which will take approximately 10-15 minutes.

After the 30-minute cooking cycle, allow the pressure to release naturally for 15 minutes. Then, carefully perform a quick release to vent any remaining pressure (about 5 minutes). Unlock and remove the lid.

Position an oven rack about 6 inches from the broiler and preheat it. Line a baking sheet with aluminum foil. Transfer the ribs to the prepared sheet, and generously slather with barbecue sauce.

Broil for 5 minutes, then remove from the oven and immediately apply another coat of barbecue sauce. Serve hot, and enjoy! (Cook time: 5 minutes)

For an even deeper smoky flavor, consider adding a dash of smoked paprika to your dry rub.
Adjust the barbecue sauce to your liking – sweet, tangy, or spicy. The choice is yours!
Don't overcrowd the ribs in the Instant Pot; work in batches if necessary for even cooking.
