Follow The Directions

01

Step

Bring a large pot of lightly salted water to a boil. (5 minutes)

02

Step

Cook acini di pepe in the boiling water, stirring occasionally until tender yet firm to the bite. (11 minutes)

03

Step

Drain and rinse well with cold water.

04

Step

In a large bowl, beat together the reserved pineapple juice, milk, sugar, and instant vanilla pudding mix until well combined. (2 minutes)

05

Step

Gently fold in the pineapple chunks, marshmallows, mandarin oranges, whipped topping, crushed pineapple, and coconut into the pudding mixture.

06

Step

Cover and refrigerate for at least 5 hours, or preferably overnight, to allow the flavors to meld together.

For a tangier flavor, consider adding a tablespoon of lemon juice to the pudding mixture.
If you don't have mandarin oranges, canned clementines work well as a substitute.
To prevent the marshmallows from clumping, toss them lightly in powdered sugar before adding them to the salad.
For a richer flavor, use full-fat milk and whipped topping.

I made this for a potluck and it was gone in minutes! I did add a little extra coconut, as suggested, and it was perfect.
