Follow The Directions

01

Step

Bring a large pot of lightly salted water to a rolling boil. (5 minutes)

02

Step

Add the linguine and cook according to package directions, about 10-12 minutes, or until al dente. Drain well, reserving about 1/2 cup of pasta water.

03

Step

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. (1 minute)

04

Step

Season the chicken cubes generously with salt and pepper.

05

Step

Add the chicken and minced garlic to the skillet. Cook, stirring occasionally, until the chicken is cooked through and lightly browned, approximately 7-10 minutes. Ensure the internal temperature reaches 165°F (74°C).

06

Step

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Allow the wine to reduce slightly, about 2-3 minutes, creating a light sauce.

07

Step

Add the drained pasta to the skillet with the chicken and sauce. Toss well to combine. If the pasta seems dry, add a splash of the reserved pasta water until the desired consistency is reached. (2 minutes)

08

Step

Serve immediately, garnished with freshly grated Parmesan cheese and chopped parsley, if desired.

For a richer flavor, consider adding a tablespoon of butter to the sauce along with the pasta.
Feel free to add vegetables like spinach, mushrooms, or sun-dried tomatoes to the skillet along with the chicken for a more complete meal.
If you don't have white wine on hand, chicken broth or stock can be used as a substitute, though the flavor profile will be slightly different.
Ensure not to overcook the chicken as it will become dry.

My pasta came out a bit dry, so I definitely recommend reserving some pasta water.
