In a large pot over medium-high heat, crumble the sausage and cook, stirring occasionally, until browned (5-7 minutes).

Transfer the cooked sausage to a slow cooker. Add the water, chicken broth, diced tomatoes, rinsed lentils, chopped onion, celery, shredded carrot, and minced garlic. Season with garlic powder, parsley, oregano, pepper, basil, rosemary, and salt to taste.

Cook on Low setting until the lentils are tender, approximately 4 hours.

Stir in the diced cabbage and continue to cook until the cabbage is softened, about 15-20 minutes.

For a vegetarian option, omit the sausage and use vegetable broth instead of chicken broth. Consider adding a bay leaf during the cooking process for enhanced flavor.
Adjust the amount of salt according to your preference. Fresh herbs can be used in place of dried herbs for a brighter flavor. If using fresh herbs, double the quantity specified.
