Bring to a boil, then reduce heat to medium-low. Cook, without stirring, until the sugar transforms into a beautiful golden-brown caramel syrup. (Cook time: about 5-7 minutes). Remove from heat and let the boiling subside. Carefully stir in 1 tablespoon of hot water. Be cautious, as it may splatter. Set aside.

In a separate saucepan, whisk together the milk and 5 tablespoons of granulated sugar over low heat. Gently warm the mixture until the sugar is fully dissolved, ensuring not to scald the milk. (Prep time: 3 minutes). Remove from heat and gradually whisk in the lightly beaten eggs, ensuring a smooth and consistent mixture.

Pour the prepared caramel syrup into an 8x8-inch baking dish. Gently pour the egg-milk mixture over the caramel base. Place the baking dish inside a larger baking dish. Carefully pour hot water into the outer dish until it reaches approximately 1/2 inch up the sides of the inner dish (this creates a water bath, or bain-marie).

Bake in the preheated oven until the custard is set but still slightly wobbly in the center. (Bake time: about 40-45 minutes). To check for doneness, gently insert a knife near the center; it should come out mostly clean.

Remove from the oven and let cool at room temperature for about 10 minutes. Then, chill in the refrigerator for at least 2 hours before serving. This allows the custard to fully set and the flavors to meld together beautifully.

For an extra layer of flavor, consider adding a splash of vanilla extract to the milk mixture.
Be patient with the caramel! It's crucial not to stir it while it's cooking, as this can cause it to crystallize.
The water bath is essential for a smooth and creamy custard. It prevents the custard from cooking too quickly and curdling.
If the top of the custard starts to brown too quickly during baking, you can tent it loosely with foil.
