Roast the Vegetables: Preheat broiler. Arrange tomatillos, poblano peppers, and jalapeños, cut-side down, on a baking sheet. Broil 3 inches from the heat until the skins are charred (3-5 minutes).

Steam and Peel the Peppers: Transfer roasted peppers to a zip-top bag, seal, and let steam for 10 minutes. This makes peeling easier. Remove and discard the skins.

Blend the Base: Combine the roasted tomatillos and peeled peppers in a food processor. Process until smooth. Stir in the salt.

Sauté the Turkey and Aromatics: Heat olive oil in a large Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through (about 7-8 minutes). Ensure the internal temperature reaches 165°F (74°C).

Build the Flavor: Add chopped onion and garlic to the pot. Cook until softened (about 5 minutes). Stir in cumin and coriander, cooking until fragrant (about 1 minute).

Simmer the Chili: Pour in the tomatillo-pepper mixture and chicken broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes, allowing the flavors to meld.

Finish and Serve: Stir in fresh cilantro leaves just before serving.

For a smoother chili, blend a portion of the finished chili before adding the cilantro.
Adjust the heat level by controlling the amount of jalapeño seeds used. Removing the seeds will significantly reduce the spiciness.
Serve with your favorite toppings, such as avocado, sour cream, shredded cheese, or a squeeze of lime.
