For an extra layer of flavor, try using melted butter instead of vegetable oil. If you don't have self-rising cornmeal, you can make your own by adding 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt per cup of cornmeal. Sorghum molasses makes a wonderful substitute for honey if you can find it. It will add a distinctive Southern flavor. Adjust baking time depending on your oven.
