For a deeper, more complex flavor, toast the dried herbs lightly in a dry skillet before crushing them. Be careful not to burn them! If you don't have Creole seasoning on hand, you can make your own blend using paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, and black pepper. This rub also works wonderfully on roasted turkey or chicken. Adjust cooking times accordingly.
