Follow The Directions

01

Step

In a large bowl, whisk together the egg yolks, half-and-half, sugar, and salt until well combined. (2 minutes)

02

Step

In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon. (1 minute)

03

Step

Gradually add the dry ingredients to the wet ingredients, whisking until just smooth. A few lumps are okay. (3 minutes)

04

Step

In a clean, dry bowl, use an electric mixer to beat the egg whites until stiff peaks form. (4 minutes)

05

Step

Gently fold the beaten egg whites into the batter until just combined. Be careful not to overmix. (2 minutes)

06

Step

Preheat an Ebelskiver pan over medium-high heat. Brush each well with melted butter. (2 minutes)

07

Step

Once the butter is hot and shimmering, pour batter into each well, filling them about half to three-quarters full. (1 minute)

08

Step

Cook for 1-2 minutes, or until the bottoms are golden brown. Use a wooden skewer or chopstick to rotate each Ebelskiver a quarter turn. Cook for another 1-2 minutes, continuing to rotate until golden brown on all sides and cooked through.

09

Step

Remove the Ebelskivers from the pan and transfer to a serving platter. Serve immediately with your favorite toppings.

For a richer flavor, use browned butter to grease the pan.
Experiment with different fillings! Jam, Nutella, or even a dollop of whipped cream would be delicious.
If you don't have an Ebelskiver pan, you can use a regular pancake griddle, but they won't be spherical.
Make sure your egg whites are at room temperature for best results when whipping.
Dust with powdered sugar or drizzle with maple syrup before serving.
