Combine Vegetables and Herbs: In a large bowl, combine the shredded romaine lettuce, green bell pepper, Roma tomato, red onion, cucumber, feta cheese, fresh mint, and fresh parsley.

Prepare the Dressing: In a separate small bowl, whisk together the extra-virgin olive oil, lemon juice, grated garlic, Greek seasoning, sumac, salt, and black pepper until well combined.

Assemble the Salad: Pour the dressing over the vegetable mixture and toss gently to coat. Add the crispy pita chips and toss lightly again, being careful not to crush them. Serve immediately.

For an extra layer of flavor, consider grilling the vegetables before adding them to the salad.
If you don't have grapeseed oil, you can use another neutral oil such as canola or vegetable oil for frying the pita bread.
Adjust the amount of lemon juice and olive oil in the dressing to your liking. Taste and adjust seasonings as needed.
Fattoush salad is best served fresh, as the pita chips can become soggy if left in the dressing for too long.
