Create the Creamy Tuscan Magic: Reduce heat to low. Add baby spinach and half-and-half to the skillet. Cook until spinach wilts, about 2-3 minutes. Stir in grated Parmesan cheese and Italian seasoning. Simmer gently until the cheese is fully melted and the sauce is smooth, about 3 minutes.

Thicken (If Needed): If the sauce isn't thick enough, whisk together water and cornstarch in a small bowl. Create a well in the center of the skillet and pour in the cornstarch slurry. Stir constantly until the sauce thickens to your desired consistency.

Combine and Serve: Return the cooked shrimp and garlic to the skillet and heat through, about 1 minute. Toss the cooked spaghetti with the sauce, adding a little of the reserved pasta water if needed to adjust the consistency. Serve immediately, garnished with fresh chopped parsley.

For a richer flavor, use heavy cream instead of half-and-half.
Add a pinch of red pepper flakes for a touch of heat.
If you don't have fresh mushrooms, you can use canned mushrooms, drained.
Garnish with a lemon wedge for brightness.
Serve with crusty bread to soak up the delicious sauce.
