Toast the Coconut and Cardamom: In a small, dry skillet over medium heat, add the coconut flakes and a generous pinch of freshly ground cardamom. Stir constantly until the coconut is lightly golden brown and fragrant, about 3-4 minutes. Watch carefully to prevent burning. Remove from heat and set aside to cool slightly.

Blend the Coffee Base: In a blender, combine the cold brew coffee concentrate, ⅛ teaspoon ground cardamom, coconut milk, and coconut extract (if using). Add sugar to your preference. Blend until smooth and well combined, approximately 5-6 seconds.

Assemble the Iced Coffee: Fill three large glasses halfway with ice cubes. Divide the coffee mixture evenly among the glasses. Garnish each glass generously with the toasted coconut cardamom mixture.

For a richer flavor, use full-fat coconut milk.
Adjust the amount of cardamom to your liking. Start with a smaller amount and add more if desired.
If you don't have coconut extract, you can use a splash of coconut rum for an extra kick (for adults only, of course!).
For a vegan option, ensure your sugar is vegan-friendly.
The toasted coconut cardamom mixture can be made ahead of time and stored in an airtight container.
