Melt lard in a heavy-bottomed pot or Dutch oven over high heat. (2 minutes)

Add minced onions and cook, stirring frequently, until they are softened and deeply browned, developing a rich, caramelized flavor. (Approximately 15 minutes)

Remove the pot from the heat. Add paprika and stir quickly to combine with the onions, being careful not to burn the paprika. The residual heat will bloom the spice, releasing its vibrant color and aroma. (1 minute)

Add the beef stew meat to the pot and return to high heat. Cook, stirring occasionally, until the beef is browned on all sides, searing in the juices. Season generously with salt and pepper. (5-10 minutes)

Stir in tomato paste until well combined. Add water (or beef broth), crushed garlic, and ground cumin. Bring to a simmer, then reduce heat to low, cover the pot tightly, and cook, stirring occasionally, until the meat is very tender and easily shredded. (At least 1 1/2 hours)

Stir in the crushed dried marjoram and cook for another 10 minutes to allow the flavors to meld together beautifully.

For an even deeper flavor, brown the beef in batches to avoid overcrowding the pot.
Adjust the amount of paprika to your liking. Smoked paprika can be added for a smoky flavor.
Beef broth adds richness, but water works perfectly fine.
Serve with Keto-friendly dumplings, cauliflower mash, or enjoy it on its own.
