In a medium bowl, cream together the softened butter and confectioners' sugar until light and fluffy. (Approximately 3-5 minutes). Add the egg, orange extract, and orange zest; mix until well combined and smooth. (Approximately 1-2 minutes).

Turn the dough out onto a lightly floured surface. Roll the dough into a 10-inch long log, approximately 2 1/2 inches in diameter. Wrap the log tightly in plastic wrap or wax paper. Freeze for a minimum of 2 hours, or up to overnight. If the dough is too soft to form a log, refrigerate for 1 hour before freezing.

Remove the dough log from the freezer. Using a sharp knife, cut the log into 1/2-inch thick slices. Place the slices onto the prepared cookie sheets, leaving about 1 inch between each cookie.

For a richer flavor, use European-style butter with a higher fat content.
Make sure the butter is softened but not melted, or the cookies may spread too thin.
If you don't have orange extract, you can substitute with vanilla extract or almond extract.
Feel free to experiment with other dried fruits and nuts, such as cranberries and walnuts, or apricots and almonds.
For a more intense orange flavor, add a few drops of orange oil to the dough.
Store the cooled cookies in an airtight container at room temperature for up to 5 days.
