Follow The Directions

01

Step

Prepare the Noodles: In a large pot, bring lightly salted water to a rolling boil. Add whole-wheat noodles and cook until al dente, about 5-8 minutes. Drain well and set aside. (5-8 minutes)

02

Step

Craft the Citrus Sauce: In a separate pot, combine chicken stock, orange marmalade, tamari sauce, ginger root, and a generous grind of black pepper. Bring to a boil over medium-high heat, then reduce heat to medium and simmer until the sauce thickens slightly, approximately 20 minutes. (20 minutes)

03

Step

Infuse with Lemon: Remove the sauce from heat and stir in fresh lemon juice. Set aside. (1 minute)

04

Step

Sear the Chicken: Heat peanut oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook, stirring frequently, until golden brown and cooked through, about 5-10 minutes. Remove chicken from the skillet and set aside, leaving the flavorful oil in the pan. (5-10 minutes)

05

Step

Sauté the Vegetables: Add the thawed stir-fry vegetables to the same skillet and cook, stirring occasionally, until they are almost tender, around 4-5 minutes. (4-5 minutes)

06

Step

Marry the Flavors: Remove the ginger root from the sauce and discard. Add the cooked chicken and citrus sauce to the skillet with the vegetables. Stir well to combine and cook until everything is heated through, about 1-2 minutes. (1-2 minutes)

07

Step

Serve: Serve the Citrus Chicken Stir Fry over the prepared whole-wheat noodles. Garnish with extra lemon wedges or fresh herbs, if desired.

For a richer flavor, marinate the chicken in a tablespoon of tamari sauce and a teaspoon of grated ginger for at least 30 minutes before cooking.
Feel free to customize the vegetables according to your preference. Bell peppers, broccoli, snap peas, and carrots all work well in this stir fry.
If you prefer a spicier dish, add a pinch of red pepper flakes to the sauce or a drizzle of sriracha at the end.
To make the sauce ahead of time, prepare it up to step 3 and store it in the refrigerator for up to 2 days. Reheat gently before adding to the stir fry.
