Meanwhile, in a large skillet, heat the bacon grease over medium heat. Add the seeded and chopped jalapeno peppers and sauté until softened, releasing their aromatic heat. Add the sautéed jalapenos to the large pot with the tomato mixture. (2 minutes)

Using the same skillet, brown the beef and pork with the chopped onions and crushed garlic in small batches. This ensures the meat develops a rich, caramelized crust. Cook each batch for approximately 15-20 minutes, until browned. As each batch is finished, add it to the large pot. (60-80 minutes)

Once all the ingredients are combined in the large pot, season with salt to taste. Bring the chili to a boil, then reduce the heat to medium-low, cover, and simmer for at least 3 hours, or until the meat is incredibly tender and the flavors have fully melded. (180 minutes)

For an even deeper flavor, consider using smoked paprika in the seasoning blend.
