For a richer flavor, brown the chuck roast in a skillet before placing it in the baking dish.
Feel free to substitute other vegetables like parsnips, sweet potatoes, or onions.
If you don't have fresh chives, dried chives or chopped green onions can be used.
Ensure the chuck roast is fork-tender before uncovering and adding the cheese. If it's still tough, continue roasting, covered, for another 30-60 minutes.
Use any cheese you like, such as Monterey Jack.
