Follow The Directions

01

Step

Gather all ingredients.

02

Step

In a large bowl, combine the plums, bread crumbs, flour, suet, eggs, carrot, apple, candied cherries, currants, golden raisins, mixed fruit peel, raisins, chopped blanched almonds, brown sugar, stem ginger, walnuts, ground almonds, lemon juice and zest, mixed spice, and baking powder. (5 minutes)

03

Step

Stir in the ale and mix thoroughly. Invite each family member to take a turn stirring and make a wish for good fortune in the coming year. (5 minutes)

04

Step

Grease 2 large or 4 small pudding basins. Fill each basin with the pudding mixture, leaving about 1/8 of the space at the top. (10 minutes)

05

Step

Cover each basin tightly with greased waxed paper, then with foil. Secure with kitchen string to ensure a tight seal. (10 minutes)

06

Step

Place the puddings on a trivet in a large pot of boiling water, ensuring the water reaches halfway up the sides of the pudding basins.

07

Step

Steam the puddings over medium-low heat in the boiling water for 10 hours for large puddings, or 5 hours for small puddings. Remember to regularly top up the water to maintain the water level until the puddings are quite firm and set. (5-10 hours)

For a twist, substitute a mixture of fresh and dried apricots, peaches, or other fruits for the plums.
If you prefer a non-alcoholic version, you can substitute milk for the ale.
Serve the pudding warm with brandy butter or rum butter for an extra touch of indulgence.
Ensure the pudding basins are well-sealed to prevent water from seeping in during steaming.
