Preheat the oven to 350 degrees F (175 degrees C). Spray 18 cups of a muffin tin with nonstick cooking spray that contains flour. (5 minutes)

In a large bowl, whisk together the flour, sugar, chocolate chips, baking powder, and salt. (5 minutes)

In a separate bowl, combine the ricotta cheese and eggs, beating well after each addition. Whisk in the milk and vanilla extract until smooth and blended. (5 minutes)

Gently fold the ricotta mixture and canola oil into the flour mixture until just combined. Be careful not to overmix. (5 minutes)

Spoon the batter evenly into the prepared muffin cups, filling each about 2/3 full. (5 minutes)

Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, approximately 22 to 25 minutes. (25 minutes)

Remove the muffins from the pan immediately and transfer them to a wire rack to cool completely. (5 minutes)

For a richer chocolate flavor, use dark chocolate chips or add 2 tablespoons of cocoa powder to the dry ingredients.
If you don't have nonstick cooking spray with flour, you can grease and flour the muffin tin yourself.
The batter can be made ahead of time and stored in the refrigerator for up to 24 hours. Bring to room temperature before baking.
These muffins are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to 3 days.
