Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook until well-browned on all sides and cooked through (4-5 minutes per side). Transfer chicken to a plate, cover, and set aside to keep warm.

Add sliced mushrooms and leeks to the skillet. Cook over medium heat, stirring occasionally, until mushrooms are browned and leeks are softened (4-6 minutes). Pour in white wine and cook for about 1 minute to deglaze the pan.

In a small bowl, whisk together chicken broth and cornstarch. Add this mixture to the skillet and cook, stirring constantly, until the sauce thickens (2-3 minutes). Stir in sour cream and Dijon mustard until well combined (about 1 minute). Season the sauce with salt and pepper to taste.

Return the cooked chicken thighs to the skillet and nestle them into the sauce. Continue to cook until the chicken is heated through and an instant-read thermometer inserted into the thickest part of a thigh registers 165°F (74°C) (8-10 minutes).

For a richer flavor, use full-fat sour cream instead of low-fat.
Serve over a bed of fluffy quinoa, couscous, or mashed potatoes to soak up all that delicious sauce.
A splash of lemon juice at the end can brighten the flavors.
Make sure the chicken is fully cooked.
