Step

In a large stockpot set over medium-high heat, combine the chopped apple, onion, celery, carrot, jalapeno, minced ginger, curry powder, minced garlic, garam masala, and red pepper flakes. Add the olive oil and sauté, stirring frequently, until the vegetables begin to soften, about 3-5 minutes.

Pour in the chicken broth and chopped tomatoes. Bring the mixture to a boil, then reduce the heat to a simmer. Add the chicken breasts, cover the pot, and cook over medium heat until the chicken is cooked through and no longer pink inside, approximately 15 minutes.

Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot. Stir in the coconut milk and fresh spinach. Remove the soup from the heat as soon as the spinach begins to wilt, about 1 minute.

Garnish with freshly chopped cilantro. To serve, place about 1/2 cup of cooked jasmine rice in each serving bowl. Ladle the soup over the rice and serve with a wedge of lime on the side of each bowl, for squeezing into the soup to taste.

For a richer flavor, use full-fat coconut milk.
Adjust the amount of jalapeno pepper to control the spice level.
Leftovers taste even better the next day as the flavors meld together.
Feel free to substitute other vegetables you have on hand, such as bell peppers or zucchini.
