Lightly brush chicken breasts with melted butter. Broil for 2-3 minutes per side, until lightly browned. (6 minutes)

Arrange browned chicken in a 9x13 inch baking dish. In a large bowl, combine the reserved cherry juice, brown sugar, chili sauce, water, Worcestershire sauce, sliced onion, and raisins. Season with salt and pepper to taste. Mix well and pour the mixture evenly over the chicken. (10 minutes)

Cover the dish tightly with aluminum foil and bake at 325°F (165°C) for 1 hour. (60 minutes)

Remove the foil cover, add the drained cherries and brandy to the dish. Bake uncovered for an additional 15 minutes, or until the sauce has thickened slightly and the chicken is cooked through. (15 minutes)

For a richer flavor, consider marinating the chicken breasts in a portion of the cherry juice mixture for at least 30 minutes before broiling.
If you prefer a thicker sauce, you can whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 5 minutes of baking.
Serve Chicken Jubilee over rice, mashed potatoes, or couscous to soak up the delicious sauce.
Garnish with fresh parsley or thyme for an added touch of freshness.
