In a large, non-reactive container (at least 1 gallon) with a lid, combine the cider vinegar, white vinegar, and sugar. (5 minutes)

Cover the container tightly and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld. (4 hours or more)

For a smoother sauce, use a whisk to combine the ingredients initially.
Adjust the amount of cayenne pepper to control the level of heat. Start with a small pinch and add more to taste.
This sauce will keep in the refrigerator for up to 2 weeks.
Consider using a high-quality ketchup for a richer flavor.
Experiment with adding a splash of your favorite hot sauce for an extra layer of complexity.
