Sauté Aromatics: Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion, bell pepper, green onions, jalapeño, and minced garlic. Cook, stirring occasionally, until the vegetables are softened and fragrant (approximately 8-10 minutes).

Combine and Simmer: Add the pork pieces, quartered cherries, lime juice, chopped cilantro, chili powder, cumin, and onion powder to the pot. Stir well to combine all ingredients. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it simmer gently until the vegetables and cherries have released their juices and the pork is cooked through and tender (approximately 30 minutes).

Reduce and Glaze: Remove the lid from the pot. Stir in the honey and season with salt and pepper to taste. Continue to simmer, uncovered, until the sauce has reduced slightly and the pork is beautifully glazed (approximately 20-30 minutes). Note that the sauce will not be extremely thick but should coat the pork nicely.

For an extra layer of flavor, consider searing the pork pieces before adding them to the pot. This will create a rich crust and enhance the overall taste of the dish.
If fresh cherries are not available, you can use frozen cherries (thawed) or even cherry preserves, adjusting the amount of honey accordingly.
Adjust the amount of jalapeño based on your preferred level of spiciness. Remove the seeds and membranes for a milder flavor.
Serve this delightful pork dish with rice, quinoa, or warm tortillas. Garnish with extra cilantro and a lime wedge for a burst of freshness.
