Follow The Directions

01

Step

Preheat oven to 375 degrees F (190 degrees C). Ensure an oven rack is positioned in the center. (Prep Time: 5 minutes)

02

Step

Heat olive oil in a 10-inch ovenproof skillet (with lid) over medium heat. Add sliced green onions and cook, stirring occasionally, until softened and fragrant, about 2 minutes. (Cook Time: 2 minutes)

03

Step

Add one package of baby spinach and 2 tablespoons of water. Cover the skillet and cook until the spinach is wilted, about 1 minute. Use tongs to stir the spinach. (Cook Time: 1 minute)

04

Step

Add the remaining package of spinach and remaining tablespoon of water. Cover again and cook, stirring once or twice, until tender, about 2 minutes. Remove the skillet from the heat. (Cook Time: 2 minutes)

05

Step

While the spinach cooks, bring a saucepan of salted water to a rolling boil. Break each ramen noodle block into 4 pieces and add to the boiling water. Cook, stirring occasionally, until just tender – about 3 minutes. (Cook Time: 3 minutes)

06

Step

Drain the noodles in a colander and rinse thoroughly under cold running water to stop the cooking process. Toss the drained noodles with the spinach mixture in the skillet, spreading the mixture evenly over the bottom of the pan. (Prep Time: 2 minutes)

07

Step

In a blender, combine the eggs, softened spreadable cheese, and salt. Blend until completely smooth and creamy. (Prep Time: 2 minutes)

08

Step

Pour the egg mixture evenly over the spinach and noodle mixture in the skillet. Gently stir the spinach mixture with a fork to allow the egg mixture to flow underneath, ensuring even distribution. Sprinkle the top evenly with grated Parmesan cheese. (Prep Time: 3 minutes)

09

Step

Transfer the skillet to the preheated oven and bake until the frittata is puffed slightly and a toothpick inserted into the center comes out clean, about 35 minutes. (Bake Time: 35 minutes)

10

Step

Remove the skillet from the oven and let it cool for a few minutes before slicing. Cut the frittata into 4 wedges and serve directly from the skillet. Garnish with additional grated Parmesan cheese, if desired. (Rest Time: 5 minutes)

For an extra layer of flavor, consider adding sautéed mushrooms or sun-dried tomatoes to the spinach mixture.
Feel free to experiment with different types of spreadable cheese to customize the flavor profile to your liking.
If you don't have an ovenproof skillet, you can transfer the mixture to a greased baking dish before baking.
To prevent sticking, ensure your skillet is well-seasoned or lightly greased before adding the ingredients.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave before serving.
